Would this be good choice between concrete and sheet vinyl in bathroom  Also on concrete under engineered wood in family room?

We used this in the basement (concrete floor) after laying 2x4s and shimming to level a very “unlevel” floor.  We also put foam insulation sheets between the studs because the floor was cold.  This subfloor is sturdy and warm and was a great base for the floating floor that we put on top of it.  I wanted a strong floor because the furniture going into this room is fairly heavy and I also bring pieces of exercise equipment into the room as I don’t have an exercise room yet.  That will be next.

Is this suitable for moisture wicking between a concrete basement floor and floating laminate flooring?

Comfortboost is a vapour barrier and an excellent choice to use under laminate flooring in a basement on a concrete subfloor. Please note that the concrete must be allowed to cure for 30 days minimum and its moisture levels may not exceed 8 lbs/24 hours as measured by the Anhydrous Calcium Chloride Test (ASTM-F-1869-98) or 80% RH (ASTM F2170)

I’m not clear on whether this is a vapour barrier.  Can I lay the Comfortboost directly on top of DMX Plastics Limited DMX 1-Step 2.0 (a vapour barrier) then lay a 12mm thick laminate plank floor on top? Or would this create a double vapour barrier?

So I am laying floating cork flooring on top of concrete slab for my sunroom addition. Would this be a good option? Wud the reflective side sit against the concrete slab or face up towards the cork flooring? Is there a better option of underpayment?

Yes its a great option. very easy to work with. reflective side faces upward and foam acts as insulating barrier. haven't found any better product. used it with cork underlayment and electric in floor heating in a basement and now its so warm even when floor heating is turned off.

I used a similar product for heating and used this underlayment beneath it. Unlike yours, ours was over a plywood sub-floor. We used an Armstrong premium vinyl tile product over top. The radiant heat is very good and I suspect it is, in part, due to the reflective surface. However, the thickness of the underlayment causes the floor to feel a bit too spongy for my liking. My wife says she prefers it, but I would prefer if it was firm and more like a 'real' tile floor. However, it may actually be preferred over your hard unforgiving poured slab.

Does the metallic surface have any conductive properties. I was thinking of using this as an underlay beneath my heated floor strips but they would short out if this was conductive.

Comfortboost's reflective surface is not conductive. When installing this over any radiant heated floor system the reflective side should always face up into the room.
