What about this unit causes cancer specifically? Does the food come into contact with dangerous chemicals?

Nothing about the unit causes cancer. The entire California Prop 65 Warnings process has become a joke with equipment manufacturers. It's simply easier to issue the warning than verify every component of the appliance fully meets the requirements. It's also a way to limit liability. Worst case there might be a switch that has cadmium plating on a contact or one solder joint from a supplier could have lead in it. The unit heats the air, that's it. No part of the appliance even touches the food - it's just like a regular oven but smaller and lower temperature.
