I had to take one star off for the typical 7-8 blinks at start-up. The old bulbs started up with just 2 or 3 blinks, not an average of 7. Color is good, real 2700 Kelvin.

Brightness is measured in lumens. The higher the lumen count, the more light a bulb will produce. Color temperature (4100K vs 2700K) does not impact brightness, but rather the color of the light. 2700K/Soft white is a warm and inviting color, similar to the color of light that a traditional incandescent produces. 4100K/Cool white is a cooler, whiter light that is typically used in office and store environments.

What does the "4100K" mean? The bulb I need replacing says 6400K -- will this one work? Everything else in the description looks compatible.

The K number refers to the brightness of the bulb. Higher the number, brighter the light. For instance, 500K is considered to be like sunshine. To get more information, Google the brightness of K rated bulbs.
