Rated 5 out of 5 by from I love the WSM I received this just under a month ago for a reward from my employer. I only used it once to smoke a brisket, and I can’t wait to get home and throw another brisket on there. It was delicious. Very easy to regulate the temperature with the vents, a lot easier than I was expecting. I was thinking I’d have to babysit it all day, but it held the temperature excellent. Only thing was I never added enough charcoal at the beginning and I needed to add more towards the 8hr mark, but that was no fault of the smoker. The brisket had a very nice Smokey taste and was super tender. The family and guest loved it. Looking forward to using it again.

Rated 5 out of 5 by from No matter what product Weber quality is the best!! I asked for this for my birthday! We own other webber products and always stick with Webber because we have never been disappointed. The smokey mountains parts are all make with thick metal which was a selling feature for us because we love products that last. The heat is always constant though the cooking process and rarely even have to adjust the vents. It us easy to clean and I can't say enough about it. Thanks to Webber everyone loves my smoked brisket and ribs. Thinking of becoming a pit master. I would have taken photos but with two teenage boys the eat everything before I can.

Rated 4 out of 5 by from Smoked BBQ…Nice Change (This review was collected as part of a promotion.) Was never sure about having a smoker. Seems to be a lot of money, and a lot of learning. There are a few things that would improve on the purchase experience. I had a terrible time (even with a charcoal chimney) getting the fire started. Particularly annoying at 05:00 AM at a few degrees above freezing. Took about 2 hours to figure it out and get the temperature up to 225 F. A (optional) comprehensive cook book would be a gift from heaven, especially for first timers. How to start out slow - chicken wings? ..and eventually graduate to a brisket, and/or pork rump. How best to use 2 grilling platforms in one smoker? There are more questions then answers. I shouldn’t have to search through YouTube to satisfy this hunger.

Rated 5 out of 5 by from Excellent Smoker I just got this smoker and tried it out for the first time. Easy to assemble, easy to get going and little maintenance in terms of watching for heat. In fact I was amazed that the temperature stayed at the perfect 225 to 250 farenheit the entire 4 + hours that I was smoking ribs. They turned out delicious. Use the weber hickory wood chunks for extra flavor.

Rated 5 out of 5 by from Easy To Use with Maximum Results Bought this about 4 months ago to replace my electric smoker and i haven't looked back. It's so simple to use and operating costs are much smaller then the pellet smoker. Once you get it dialled in with the vents it pretty much hits 225-250 degrees and stays there for the entire cook. I live in Manitoba and have used this in -35 Celsius without issues. Cleanup is a breeze with the way the smoker breaks into 3 main pieces. Great item by Weber

Rated 5 out of 5 by from Easier to use than I thought. First time WSM user and initially had an issue getting the temperature in the 200-225 range. I attribute this to the 10 liters of cold water I put in the water bowl. Next time it will be hot water and will wait for the temperature to come up before putting in the ribs. The pork side and back ribs still turned out fantastic. A little too much smoke as I added more smoking wood part way through but over all a great investment and an awesome supper. I will be making a wind guard for it as it got breezy and that quickly sapped some of the heat.

I had a very small water smoker before and got rid of it because my Weber kettle was doing the job. I needed more room and the WSM has enough room for my family. Did ribs on it and they turned out excellent. Very easy to use and maintain low temps. I added some 1/4" screen cloth the the charcoal grate and was able to get 6.5hrs of smoking out of a little more than a chimney full of briquettes. If your thinking of buying one, go ahead, what are you waiting for.

Can I sear meat on this smoker? What is its maximum temperature?

The more charcoal you use, and the more air flow through the unit, the hotter it will get. it's possible to sear, but the unit is best used as a smoker, with lower temperatures and slower cooking.

Everyone has great feed back but I need to know - at the cottage we generally put in 8-10 racks (cut in half) of side ribs. The old masterbuilt that we started with required 2 smokers to get this done. How many racks of ribs can I fit in here to do?
